1. Spam kimchi kimbop
Kimbop is a soul food for Koreans. My mom used to wake up at 5AM when there was a school picnic to roll kimbops. Normally it takes about two hours to roll regular kimbops, but this version takes a lot shorter as I cut down some ingredients such as spinach, cucumber, etc. It is still delish though!
- Ingredients:
dry seaweed sheets
cooked rice (1 bowl/person)
sesame oil
kimchi
spam
eggs
yellow radish pickle
(optional) crab meat
- Directions:
- Grill spam and cut them into half inches
- Add the beaten, swirled egg mixture to the pan and swirl it around to cover the whole pan
- Put the egg omelet to a board and cut it into half inches
- Cut the pickle into half inches
- Add sesame oil and a little bit of salt to cooked rice
- Place one dried seaweed sheet on a bamboo mat and put the rice on it. Spread it evenly to cover 2/3 of the seaweed
- Add your egg slices, spam slices, kimchi, one radish pickle at about 1/3 point of the seaweed
- Roll the seaweed. Finish the stick by rubbing some water at the edge of the seaweed sheet to make sure it doesn't unfold
